Sea scallops have a sweet rich taste that ranges from mild to briny. Raw, the drum-shaped meat is a shiny, creamy white, sometimes with pink or brown spots. Cooked meat is opaque white with a firm, lean texture. Large Sea Scallops still cook quickly. Try baked, broiled, fried, grilled, sautéed, or steamed. Harvested in Massachusetts and Virginia, available year round. Individually quick frozen (I.Q.F) at harvest, under 10 scallops per lb.
