We have lived on the east of Florida and where accustomed to fresh Atlantic fish. Since that time we have moved to Woodstock, IL and could not find any product we were happy with in our local grocery stores.  We noticed an ad in the local paper advertising fresh fish from all seafood located right in town so we decided to give them a try. We have not been disappointed and usually buy fish a least once a week. The quality has been exceptional and we once again can enjoy the fresh fish we had grown accustomed to. The Walleye we bought from you yesterday was magnificent!! Fran put a Citrus Marinade in a ziplock with the Walleye for several hours in the fridge and then cooked it on the grill (The weather was not that cold). Cooked the fish skin side down, added marinade, and never turned the fish over, cooked from one side only. It was perfect. The citrus marinade was: 1/2 cup olive oil; 1/4 cup lemon juice; two tablespoons shallots chopped fine; 2 teaspoons grated lemon zest; 2 teaspoons chopped tarragon or dill; 1/2 teaspoon ground pepper; 1/2 teaspoon salt.
